Thanksgiving Smells Delicious


That title is a bit misleading. I'm not talking about the leftovers that can stink up your fridge days after the holiday, or the way Aunt Gertie shows up on Thanksgiving wearing her dime-store perfume that lingers for weeks after she goes home.

No, I'm talking about the cinnamon, pumpkin, turkey-in-the-oven smells.

Which Thanksgiving scent brings you right back to a meal at your grandma's house?

Right now, my house smells pretty amazing. Today was our fall soup feast at our church. I made my favorite Chicken Tortilla soup.

I've been MIA for awhile, but wanted you to know I plan on posting quite a bit this week. There's lots going on in our neck of the woods and I plan on sharing.

Our anniversary is Tuesday, and I think it's time for a mushy-gushy post to my hubby. Whaddya think?

Homemade Potpourri

I am a HUGE fan of scented candles, pumpkin spice being my absolute favorite. I would have one burning all day long if I could. Unfortunately, that can get pretty pricey. Quite a few years ago I found a recipe online for simmering potpourri that you can make yourself. The scent that permeates your home from this blessed concoction can only be explained as heavenly!

I thought I would share Joanne's World Famous Simmering Potpourri Recipe with you, so that your home can smell just as delicious.









5-10 cinnamon sticks

1 heaping tbsp whole cloves

2-3 bay leaves

1/2 sliced lemon

1/2 sliced orange


Put all ingredients in a pot of water on your stove. Simmer over low heat, checking regularly so that it doesn't boil over or burn out all water.

Chocolate Cheesecake lovers, here is one for ya!


I thought I would share the no-bake Chocolate Cheesecake recipe that my daughter Meghan used for my Mother's Day dessert on Sunday. The picture on the left is not of the one she made. The cheesecake she made went MIA a long time ago. But it did look alot like the one to the left there, minus the strawberries. I make a homemade Chocolate Cheesecake every Christmas and it is so much work. Oh, it is delicious, but what a job! This cheesecake is much easier and just as tasty!


Meghan's Famous-Bless your Mama-No-Bake Chocolate Cheesecake Recipe


* 1 1/2 Cups semisweet chocolate chips

* 1/2 Cup granulated sugar

* 11 ounces cream cheese

*1/4 Cup butter or margarine softened

* 2 Cups frozen whipped topping, thawed

* 1 Graham cracker OR Oreo pie crust

*More whipped topping for topping the pie

* Shaved milk chocolate optional


Preparation: Melt chocolate chips over low heat in saucepan or microwave, stirring frequently until smooth and melted. Set aside to cool. In large mixer bowl beat cream cheese, sugar and butter until smooth. On low speed blend in the melted chocolate.


Fold in whipped topping until blended. Spoon cheese chocolate filling mixture into prepared graham cracker crust. Cover and chill until firm. Garnish with whipped topping and shaved chocolate if desired.


**Hide in your refrigerator behind the milk and eggs.

How to get your kids to eat their veggies...


Our two oldest kids eat veggies all the time. Our two youngest, not-a-so-much. I am not sure whether I just became less pushy with our younger children, or became more tired. So now I try and trick my little angels into eating their veggies. I put grated carrots into meatloaf to disguise their presence and have also served them raw with dip. Instead of going to the fuss of making a salad, often I will cut up raw veggies and serve them with Ranch dressing. Today I felt like making my favorite homemade 'Bleu Cheese Dressing' recipe.




I still remember where I was almost twenty years ago when I tasted it for the first time. It was a baby shower for one of my friends and I just had to get the recipe from her grandmother. She was eager to share..thankfully! So I have included it below for all of you. I made it in a low-fat kind of way, but if you can afford all the fat and calories (I can't), then make it that way. Delicious!



These are the ingredients I used in the picture below.



Joanne's Famous Bleu Cheese Dressing/Dip

2 Cups Mayo (I used reduced fat)
16oz Sour Cream (I used fat free)
2 Cloves Garlic
1Tbsp. Lemon Juice
1/4 Cup Red Wine Vinegar (we didn't have any so I used white wine vinegar)
8oz Bleu Cheese

Mix well. The longer it sits in the fridge, the better!

Mmmm Mmmm Good!


I know without a doubt that many of you gals out there are chocolate lovers. I have a few close friends that on occasion would sell their children for a bit of chocolate. I too love it, but even more than chocolate...I LOVE peanut butter!

The other day I was busy cleaning the house and had a sweet tooth. I decided to find a recipe online that would doctor up a cake mix. I ended up making a 'Peanut Butter and Chocolate Cake'. Here are the ingredients. If you are on a diet...hide your eyes!


The kids loved it and I loved it too. Here is a picture of my 13 year old master taste tester. He requested a second piece!



Since it was a hit around here, I thought I would share the recipe.

Peanut Butter Chocolate Cake Recipe

1 box of yellow cake mix
1/2 Cup peanut butter
*make the yellow cake as directed, only add 1/2 Cup peanut butter. Bake and cool completely.

8 squares of unsweetened chocolate
2 Cups peanut butter
1 Cup powdered sugar
1/2 Cup chocolate syrup
*I melted all ingredients in a double boiler. (I didn't add the powdered sugar, it was sweet enough for us) Frost cake!

Winter Blah...

Ok, so maybe the winter blues have hit...I am feeling pretty blah right about now. Kind of like I am walking in water. Boring, boring, boring... Nothing is too interesting and nothing seems very exciting to write about. So I thought I would include a 'Clam Chowder Soup' recipe that I recently made in the crock pot. It was really delicious and a hit with our family. Making a big pot of this with some crusty sourdough bread is just the medicine needed to cure the winter blah's!


Crock Pot Clam Chowder Soup
Clam chowder recipe with minced clams, bacon, onion, and potatoes and milk.
INGREDIENTS:
3 (6 1/2 oz.) cans minced clams with juice
1 8oz bottle of clam juice (I had this on hand, you don't have to add this if you don't want to.)
1/2 lb. bacon diced
1 cup chopped onion
6 to 8 medium potatoes, peeled and cubed
3 c. water
3 1/2 tsp. salt
1/4 tsp. pepper
4 c. half and half cream or milk (I used non-fat half and half)
3 to 4 tbsp. cornstarch
chopped fresh parsley, for garnish
PREPARATION:
Cut clams into bite-sized pieces if necessary. In skillet, saute salt pork or bacon and onion until golden brown; drain. Put into slow cooker with clams. Add all remaining ingredients, except milk, cornstarch, and parsley.
Cover and cook on high 3 to 4 hours or until vegetables are tender. During the last hour of cooking, combine 1 cup of milk with the cornstarch. Add cornstarch mixture and the remaining milk and stir well; heat through. Top each serving with a little chopped parsley and serve with crackers or crusty French bread.

Apple Crisp Showdown!



One of the most hectic times of day for me is the afternoon. After driving to three different schools, picking up four very different children I then bring my brood of chicks home and they cluck-cluck-cluck around me in our kitchen. As I try and figure out what to make for dinner, my children share stories with me of their day, a few pull out homework to work on at the kitchen table while the rest search like a pack of wild dogs for a snack to devour. It was during this time last week that my son David (13) asked me to make him an apple crisp for his class. Being the wonderfully attentive mother that I am…I forgot. My son reminded me by a hand scribbled note taped to my bedroom mirror at 10:30pm that the apple crisp was needed for school TOMORROW. Guess who was up at 6am making apple crisp?

Apparently my son David had a showdown with his friend Luke over whose mom made the best apple crisp. On the way to school yesterday morning I tried to convince my son that there was no way that his friend would ever admit that my apple crisp was better than his own mothers. As he stepped out of the car, with the piping hot dessert in his hands my son said, “Mom, I know that. I don’t expect Luke to tell me that yours is better, he has his pride mom. But there is a way that I will know. If he tells me that yours is almost as good as his moms then what he really means is that yours is better. That is how I will know.”

Everytime our family sits down to dinner, my son David tells me how great my cooking is. He usually says with a mouthful of food, “Thanks mom, this is great!” I am not exaggerating, he tells me this almost every night. I am aware that he is a growing boy and that his taste buds aren’t fully matured. He would compliment a Twinkie and Dr.Pepper as a meal, but my heart swells every time he says it. What a reminder to me of the power of a sweet word, a kind word. The Bible says in Proverbs 12:25 “An anxious heart weighs a man down, but a kind word cheers him up.” My son is such an example of this verse to me.

So today I am including for all of you my famous apple crisp recipe for your Fall pleasure.

Oh, and just in case you're wondering...Luke admitted that my apple crisp was almost as good as his moms'.(David was thrilled.)

Joanne’s Almost As Good As Your Moms'-Apple Crisp
INGREDIENTS
• 2 cups all-purpose flour
• 2 cups rolled oats
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground nutmeg
• 1 1/2 cups packed brown sugar
• 1 1/2 cups butter (I never said it was fat free!)
• 2 quarts peeled, cored and sliced apples (I use two kinds, fuji & Macintosh)

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large bowl, combine the flour, oatmeal, cinnamon, nutmeg and brown
sugar. Cut in until mixture is crumbly.

3. Take half of the mixture and pat it into the bottom of a 9x13 inch baking
dish.

4. Cover crumb mixture with apple slices, then sprinkle apple slices with
remaining crumb mixture.

5. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes or until apples
are tender.
